I saw that also. My guess is that the models forecasted a rapid intensification at landfall and then brought down the pressure slowly before bringing down the wind speed, I don't know.
Sometimes the eyewall constricts during landfall and the wind speed jumps up before going down.
Also, the display point just before landfall may have been just below the cutoff for a Cat 3 and then the model intensity rose somewhere into the Cat 3 intensity level around landfall only to fall back down below Cat 2 intensity level after the next display point.
The image automatically updates, so it now shows Cat 3 just before landfall.
If this turns into another Katrina then I hope we respond faster and better.
I hope the levee pumps are greased up and many buses and trains are running extra hours if need be.
