I forgot that places in Florida actually have to do that, although now that I think about it I think I have heard of some people in areas not too far from me doing that in central Florida. I did just see a picture of a frozen fountain in the past few days from Fort Walton Beach. Palm tree, frozen fountain with icicles, always a weird combination.

Now that I think about it my dad has ran the pool pump on some very cold nights around here when it was freezing for quite awhile just to be safe. We have not had that kind of winter though in several years. (and not since the early to mid 80's have we seen anything that I think could really test the pipes) Most of Florida has done very well this year so far. I saw the arctic blast did make it to the panhandle though.

You probably do not use as much water as you think. (Then again, I have no clue as I have not lived somewhere where that was necessary.) You could try to catch it in a container that could overflow if needed. Or if it is a lot more than I think, how about letting it drip into a bathtub? I have a tub that allows overflow to run out if it gets to full. Perhaps that is too much trouble. Or do you need to have the water go down the drain to try to move any water that might be standing in those pipes? I have no clue, shows what I know, lol. Those are northern people problems*.
