Ethel in 1960 went from a 40 kt (46 mph) Tropical storm to a 140 kt (160 mph) Cat 5 in 18hrs!!
http://weather.unisys.com/hurricane/atlantic/1960/ETHEL/track.dat
But the pressure of Ethel does not relate to a Cat 5, It's lowest pressure was 972mb.
