Questions on Volcanic Ash...

What are the components? Is it acidic when mixed with water? What does it do to the farmland? If it kills all green things, how long does it take to recover? And, what about animals? I understand that there is a concern about European drinking water...what happens there?
And finally, when lava hits salt water....is it true it creates a deadly gas?
