Vorticity levels on the models

I often check the model animations on this link:

There are various levels of vorticity options on the drop down menu of each model and I look at the 850mb vorticity since it seems to be the one that is used in most of the discussions on this forum.  I have often wondered what the other vorticity levels are used to determine... (250mb, 500mb, 700mb, 925mb).  Some of the models only provide Sea Level Pressure while others include Theta E,  Zonal Shear,  and Rainfall among the options.  If anyone on the forum can provide some insight about what can be gained from looking at something other than 850mb vorticity or Sea Level Pressure it would be most appreciated.
