With existing water it has happened sometimes, in Florida and also elsewhere, like Tropical Storm Erin:

I remember that one getting very organized over land.

But I don't know about a storm doing it by dropping its own moisture. I guess there are other factors too, but perhaps it might make it not weaken as much. The storm may not make it far inland, with much of it remaining over water. That will probably be the overwhelming reason for holding together better than it normally would in terms of convection. I don't know what that would mean in terms of wind further inland, such as being higher than it would and duration of the wind.
