You got that right. I'd start with evolution then move on to the 2nd law of thermodynamics (which basically explains reality.)

The difficulty with "knowing" things is twofold. One, there's more to learn than any one person can; so we have an array of scientific specialties who each use the "scientific method" of analysis to "know" something,  then submit their findings to "peer review" for confirmation. The second difficulty is simply a lack of effort. That is, most people are simply too lazy to learn.

And then there's the millions of Fundamentalists who say "oh...science doesn't know anything; it's just a bunch of theories." Heck, who needs the Bing Bang Theory, the Theory of Evolution, the Theory of Gravity, the Theory of Electro-Magnetism, etc., when you've got Bronze Age mythology!
(I wonder how many of them know there's no higher echelon in science than "theory.")

Everyone thinks they have common sense....and in fact, they do. But what few understand, is that common sense is a horrible knowledge tool. Knowledge, reality, etc., comes only after using a specific, well-defined process known as "critical thinking." (Most people believe they are "critical thinkers" but few are -  few know how the process is defined.)

Yes, knowing things is difficult. Knowing what to believe is even harder; especially when one doesn't know HOW to know!
