Potential vorticity, PV, is an indication of the tropopause height.

310K potential temp is roughly the same height as 850mb which is considered the top of the boundary layer.

So, when you see the PV dark brown dip into southern latitudes at 310K that means the tropopause (bottom of the stratosphere) hit the top of the boundary layer.

Gotta remember, in general, the tropopause height is a function of latitude.

It is highest near the equator and lowest near the poles.
